Curry-Garlic Aioli – A New Twist on a Classic Dip

A couple weeks ago I had a yellow-curry aioli at a restaurant. It was served with fries as a dip. I knew instantly that I had to make my own at home as this was so delicious. Enter my Curry-Garlic Aioli. Aioli in general is delicious, but adding the flavours and spices from curry powder takes this to a new level. This has so many uses as a dip, spread, or topping. I recently used this on Pineapple Burgers and it was a huge hit.

What is Aioli

The definition of aioli has changed in recent decades. It used to be a tedious task which involved the emulsion of oil with garlic. Nowadays, mayonnaise is used as the base and it is far easier, and just as tasty. So aioli is simply mayonnaise mixed with garlic, salt and lemon juice. Obviously there are many different versions and flavours of aiolis, this Curry-Garlic Aioli being just one of them.

Some of the ways I use aioli to liven up my dishes are:

  • As a Dip: dip your french fries, potato wedges, and crispy vegetables in the aioli.
  • Topping: Top vegetable dishes with a splash of aioli for extra flavour.
  • Chicken Wings: Make a quick and easy chicken wing dip using this Curry-Garlic Aioli recipe.
  • In place of mayo on sandwiches and burgers: Replace mayonnaise with aioli on a sandwich or a burger. I used it on my Pineapple-Topped Burger to balance the sweet pineapple with a flavourful curry-aioli.

This aioli recipe as six simple ingredients that you probably have on hand now:

  • Mayonnaise: Store-bought mayonnaise is fine here, or you can make your own. This is the base for the aioli.
  • Garlic: Fresh garlic, minced finely. Feel free to play around with the amount of garlic depending on your tastes.
  • Curry: I used red-curry as I wanted a nice red colour as well as the hotter spice to it. This aioli is by no means “spicy”, but it is just spicy enough to be able to eat without feeling the heat.
  • Lemon: Juice from a freshly squeezed lemon, or you can use lemon juice from a container. This helps add a fresh tang to the recipe.
  • Salt and Pepper: Add some salt and pepper to taste.

How to Make Curry-Garlic Aioli

This tasty aioli is an easy recipe that you can whip up in 5 minutes! There is really only one step – mix the ingredients together. Add the mayonnaise, minced garlic, curry powder, lemon juice, salt and pepper. Mix together well with a small whisk or a fork. Try to make this at least 30 minutes ahead of when you want to serve it to allow for the ingredients to impart their flavours throughout. This can be made in advance and kept in the fridge for up to 5 days (you’ll eat it before then though).

Ingredients
  

  • 1 cup Mayonaisse
  • 2 cloves garlic minced finely
  • 3 tbsp red curry powder can substitute for any type of curry powder
  • 1 tsp paprika optional, adds more colour and flavour
  • ½ lemon juiced
  • ½ tsp salt to taste
  • ½ tsp pepper to taste

Instructions
 

  • Add all the ingredients to a medium sized mixing bowl and mix together well with a small whisk or a fork.
    1 cup Mayonaisse, 2 cloves garlic, 3 tbsp red curry powder, 1 tsp paprika, ½ lemon, ½ tsp salt, ½ tsp pepper

  • Cover and refrigerate for at least 30 minutes.
    Note: This can be used right away, but additional time allows for more flavour in the aioli.

Make Ahead: This aioli can be made ahead and stored in the fridge for up to 5 days in an airtight container.
